My favorite vegetarian cookbook

Filled with great recipes that are simple and good. Half of my house is vegetarian and the other half is not, so making dinners to please all can be tricky. These recipes are easy to enjoy and not too fussy for kids to like too.

I am a huge fan of all of Jeanne Lemlin cookbooks, and this is just another addition to my collection. I am not a vegetarian, but don't eat much meat. I like simple recipes, easy to find ingredients, a good balance of nutrition, and most of all, delicious recipes. Oh, and I really like it when just one dish fulfills all these needs and you don't need side dishes (keeping it simple).
Jeanne Lemlin cookbooks all meet my criteria. Some of my favorite recipes from this particular book are: Sweet Potatoes Anna, Provencal Potatoes, Scalloped Kale and Potatoes, and the Apple Bread (with just a hint of almond flavor - it is heavenly). There are many others I love, and many I haven't tried yet.
The book's title says it all.

Jeanne Lemlin is one of my favorite cookbook authors. Her recipes ALWAYS succeed. They are well-written and friendly and contain a nice diversity of dishes. If she says a recipe is "simple" or "quick" to prepare it will be. The dishes ALWAYS taste good. Vegetarians and non-vegetarians alike will enjoy any of her books. Quick Vegetarian Pleasures is full of winners!
Delicious recipes, but not very healthy

I've used a number of recipes from this cookbook and have been mostly pleased. There are some nice deviations from the typical ingredients, including a few vegetables and grains I hadn't used before. The green bean and red pepper dish has become a staple in my home, and some of the other recipes inspired me to try different casserole dishes. Overall, I think it's a nice addition to my little cookbook collection.
However, most of the recipes in this book are very high in calories and fat. The author uses a LOT of butter and cheese--practically every recipe calls for a tablespoon or more of butter and mounds of cheese. Yes, you can cut back on these high fat additions and substitute oil in some places, but overall I would not call these recipes particularly healthy. I use most of the recipes only occasionally because of this.

I believe that this is one of those cookbooks most people will end up using all the time -- and that goes for both vegetarians and non-veggies. My husband and I recently re-dedicated ourselves to lacto-ovo vegetarianism, and, using recipes from this book, we don't miss meat at all. Also, the recipes truly are "quick", the directions are simple and easy to follow, and the ingredients are "normal", which, for me, makes grocery shopping a lot easier. One more thing -- the book is not bulky and is soft-cover, so I find it a lot easier to use in the kitchen and read in general than I do big, hard-cover cookbooks. Anyway, I hope you try this book; it really is wonderful!
Great for experienced "and" novice cooks!

I learned to cook with this book, and even though I am not a vegetarian, I have gotten a great deal of mileage out of this cookbook as have many of my female relatives who turned me on to this cookbook (my female relatives are experienced cooks & use this cookbook!). The recipes will impress and are easy to make. The other nice thing about many of the recipes is that you can easily do "make-ahead" with them. I did this w/ the stuffed tomatoes (was using them as the side dish in this particular meal) & when my husband got home, I threw the dish in the oven and he called me "Martha Stewart."
Not Just for Vegetarians

My absolute favorite cookbook - and I'm not even a vegetarian. Every recipe that I've made from this book is delicious. Although I don't find all of the recipes "quick" to prepare, they are easy to make and can be changed to fit your tastes. For example, in the Baked Couscous w/Spinach recipe, I omit the pine nuts and add sauteed mushrooms. The Cold Szechuan noodles are a nice alternative to your typical sesame noodle recipe and the grilled eggplant with spicy peanut sauce is great.
